What's the best way to roast an eggplant? Sounds dumb, but that looks great. I just pan fry it usually.
I pan fry eggplant, too. But first I slice it and salt the slices to draw out some of the water. Then I just use olive oil to saute the slices until they turn a nice brown.
Another method of cooking veggies is to take the slices and brush them with olive oil, then salt and pepper them and roast in a 375 degree oven for approx. 20 to 25 minutes, depending on the thickness of the slices.
Or you could place the veggies under the broiler.
For the red peppers, I wash them, slice them in half and then put them under the broiler as near to the element/flame as they can go and then broil until the skin turns black.
Remove from oven, place in a brown paper bag for approx. 20 minutes. After they've cooled, peel the charred skin, remove seeds and stem. Put in bowl and sprinkle olive oil over the roasted peppers. Use when needed.
