A few years ago, I was lucky to spend a week in Parma. Every morning, the hotel served plates full of the most delicate pink ribbons of exquisite prosciutto and chunks of pale yellow Parmeggiano cheese, (along with other delicacies) for the "prima colazione." It was served buffet style, and I had to restrain myself from grabbing everything that was offered off the plates and running up to my room to devour it all.

Great stuff. I've made this before, but your entry inspired me to make it again. I had wonderfull organic heirloom tomatoes, organic basil, etc. wonderfull. A few of the heirlooms were green, so I sauteed them quickly in a little xvoo and served that portion lukewarm. I'm thinking next time of combining fried green tomatoes with fresh mozarella for the redneck version of caprese salad.
 
Mmmmmmm....I'm hungry and that looks so good. I will definitely try that one once I get to a decent italian deli.

BOLOGNA? Who said that reminds them of bologna?!
